The tenderloin is the small muscle of the chicken breast. 

Inspiration: It's the perfect size for salads, wraps, stir-fry or a delicious Caesar salad. A good Caesar salad is a simple thing – crisp leaves of cos, freshly made sourdough croûtons, bacon and pan fried chicken tenderloins. Add some homemade Caesar dressing - 1 garlic clove, 2 x egg yolks, 2TB white wine vinegar, 2 tsp dijon mustard, 4 x good-quality anchovies, 3 tsp Worcestershire sauce and 1 cup olive oil. Delish.
