Inspiration: The best way to cook the chicken breast, brine in a bag of salted water the night before, remove from the liquid, pat dry, then rub a spice mix into the flesh, like our Middle Eastern meat rub. Allow that to marinate for a couple of hours and then bake in the oven for a perfectly crispy skin finish. Serve with a cucumber and mint greek yoghurt and your favourite style of potatoes!
