This is a high quality, beautifully lean cut of pasture-fed lamb backstrap (denuded). The perfect mid week healthy meal.
Inspiration: Clean and pat dry, thoroughly coat it in one of our meat rubs. Get a stainless steel pan piping hot but not so hot as to burn your oil. Add about a tablespoon of oil and sear the backstrap on one side in the pan. Once a crust forms, flip and sear on all remaining sides and ends evenly. Try a bulgur wheat salad with pomegranate, slivered almonds, sesame seeds, and a mix of yoghurt, lemon, tahini and fresh mint.
