The original cowboy steak, named for its popularity with traditional cattlemen who had a healthy appetite for large cuts of meat they could eat with their hands around the campfire.

This speciality steak is cut from the rib-eye and our expert butchers have left all the delicious intercostal meat on the bone for your flavour and dining pleasure. 

Buffalo meat is lean, and high in protein and iron, making it a healthy choice. It has a lighter, slightly sweeter and more delicate flavour than beef.

Inspiration: Buffalo is not hard to cook with but whatever you do, do not take a beef recipe and substitute it with buffalo. Buffalo needs less time and is cooked at a lower heat as it does not have all the thick intra-muscular beef fat.

Sear on each side, then finish off in the oven to cook evenly through the thick cut of meat and serve medium-rare. Best to invest in a quality meat thermometer to make sure you cook this cowboy cut just right.
