Pig's tongue is a real delicacy with an even distribution of fat & meat and is less fatty than ox tongue. 

Inspiration: perfect for low & slow cooking, 3 to 4 hours. Lovely served at room temperature with a sauce Ravigote (shallot and herbs sauce). It is also delicious pickled.
